Sardinian spiny artichoke cream.

A few hours after they are harvested, they are hulled and emulsified according to an ancient Sardinian recipe. They have a delicate and floral taste. This cream is excellent on rustic bread and bruschetta.

The thorny artichoke is typical of Sardinia, grows luxuriantly in coastal areas and is characterized by the presence of thorns at the top of the bracts.
Artichoke cultivation is of ancient origin and traces its origins back to Phoenician times.
