Pillus are a typical ancient Sardinian pasta, a kind of noodle with a zigzag edge. Pillus means in Sardinian precisely thin sheet of pasta.

Various types can be found in Sardinia. They are cooked in different ways, such as cooked with sheep broth and with plenty of pecorino cheese. Pillus are layered, in a process similar to lasagna, or boiled and topped with sheep or lamb stew.

They are also the typical pasta of a small town in the province of Oristano, Masullas where they are cooked with chicken or chicken ragout.

They are produced by bronze drawing with slow drying at low temperature.
