Lorighittas

Lorghittas have ancient origins and identity. It is a typical pasta from Morgongiori, a small village on the slopes of the splendid Monte Arci,  near Oristano.
With a shape of elongated earring, this Sardinian specialty is handmade by twisting a double strand of pasta between the fingers to create a closed braid. It is then dried naturally or in static drying cells.

To respect the tradition, during the All Saints’ Day, the women of the village gather togheter to make lorighittas, arranging it in handcrafted baskets. For a decade, however, it has been possible, for tourists to participate in the festival which takes place at the beginning of August.
The production of lorighittas is a tradition handed down from mother to daughter and it was, in the past, a moment of conviviality among the women of the town.

This very special pasta is produced exclusively by hand. To fully understand its preciousness, you must know that it can take three to four hours to make one kilo. The Sa Lorighitta Longa pasta factory is able to produce 15 kg of it a day.
Tradition, in this case, blends with a pinch of internationality. At the reins of the Sa Lorighitta Longa pasta factory is Karina, Romanian by birth, but from Morgongiori by adoption, where she has lived with her family for about fifteen years.

A beautiful story of courage and passion. In 2020, in the middle of the pandemic, she decided to open a pasta factory with the desire to make this gastronomic excellence known outside of Sardinia.
