Sardinian artichoke cream and bottarga.

Wild thistles grow wild in the valleys. A few hours after they are harvested, they are hulled and emulsified according to an ancient Sardinian recipe. They have a strong taste tending to bitterness. This cream is excellent on rustic bread and bruschetta.
