Bottarga di Cabras. Cabras’ Gold



Bottarga is a typical Sardinian food. It is also called the Cabras’ Gold due to its dark yellow colour. Cabras is a small town near Oristano where all the true bottarga is made.

Bottarga is made from Cefalo’s eggs (muggine in Sardininan language). This fish is commonly found in all mediterranean see. The process is really ancient. Studies demonstrated that the bottarga’s process was already used by Phoenician in the ancient times.

Bottarga is often used to season pasta or fegula. Just before serving it, Sardinina people put a little bit of bottarga powder on the pasta. Its taste is unique and brings the smell of the sea.

The muggine’s bottarga is carefully chosen and dried in a natural way, without adding chemicals during its process. This choise was made to preserve its quality and goodness. All the process is made in Cabras.
